  立冬將至,擺在桌上的食物不管主角配角,多多少少都得講究一個「暖」字。要麼紅紅火火,從視覺上先行一步、驅走寒意;要麼深藏不露,要吃下去才會脾胃漸燃、聚攏出濃濃的熱乎氣,比如生薑。大概所有的北方孩子都有相似體驗,前腳剛打出一個噴嚏,後腳爹媽就會端上一碗薑湯,就好像手裏握着一張祖傳秘方,只要受寒,就需生薑絕招來化解。

  當然,相生相剋的大自然物產,不就是「魔高一尺、道高一丈」的神奇體驗麼。於是這時候,南方的同學也有話說,吃遍天下的嶺南人默默拿出一份薑撞奶,瞬間將好吃和精緻推上天花板,當這邊辣得五官橫跳、束手無策時,那邊一個悠悠然慢吞吞,不落痕跡就擋開了寒氣,你說,這算不算彎道超車?

  薑撞奶的名氣實在太大,以至於很多不吃薑的人都躍躍欲試。它起源於廣東的番禺,因為經濟發展早、對外來飲食文化接收多,便有了喝牛奶之餘,讓奶製品也花樣迭出的習慣。可不得不說,絲滑的牛乳萬般好,只有這薑汁撞奶是絕妙,一個「撞」字,已詮釋出四分精神,五分內涵,還剩一分,交由食客自行品鑒。雖然看着不難,但做薑撞奶絕不是零門檻,玄機在於薑的凝乳酶可以在一定條件下跟蛋白質發生化學反應,使其凝固,所以但凡牛奶先沸、或比例不對,都會失敗。也正是味覺敏銳的老廣們,能想到把辣穿地心的薑汁,跟溫潤柔滑的牛奶來一次跨界合作,兇猛的薑遇到當地特產水牛奶,壞脾氣立刻煙消雲散。原本不顯山露水的牛奶,在薑汁的「煽動」下,也變得個性飛揚,進退有據。吃起來濃郁厚實,清甜易入口,特別是隆冬之中,彷彿有種溫潤公子在側,促膝談歡的快樂。
